How to Make a Spring Fruit Salad

Ingredients

  • 1 cup of strawberries, hulled and halved
  • 1 cup of blueberries
  • 1 cup of blackberries or raspberries
  • 2-4 kiwis, peeled and sliced
  • 1 cup of grapes, halved
  • 1 tablespoons of poppy seed
  • 2 tablespoons of honey *Warmed
  • Juice of 1 lemon
  • Juice of 1 orange

Instructions

  • Prepare the fruit: Wash all the berries, peel and slice the kiwis, halve the grapes. Place them all in a large mixing bowl.
  • Mix the honey, poppy seeds, orange, and lemon juice: In a small bowl, warm the honey with a little bit of water. Mix/Stir until well blended.
  • Combine the fruits and dressing: Pour the honey and juice mixture over the prepared fruit.
  • Toss the salad: Gently toss the fruit to ensure all pieces are coated with the honey and lemon mixture. This not only adds flavor but also helps prevent some fruits, from browning too quickly.
  • Chill: Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes. This allows the flavors to meld together and the fruit to chill.
  • Serve: Remove the fruit salad from the refrigerator and give it another gentle toss before serving. You can garnish with a sprig of fresh mint or a sprinkle of shredded coconut for an extra touch of flavor. And if you are anything like my best friend, feel free to add rum, lol.
